Chinese Chicken Soup Recipe Ginger

This recipe has a hint of ginger. You can, of course, up the ginger if you want more, and some say it’s good for you. It’s a great, quick, easy, healthy meal I think you’ll love. We served this up to 2 people as a main dish, but you easily serve four as an entre.

You have options: Remember not to go over the recommended quantity for your TM bowl, though (which will depend on the model you have). Check this out for inspiration

Ginger: To add more ginger flavour, you could easily double the quantity. Chop the knob of ginger into four, drop it in the Thermomix and with the MC in place, use the same time and speed to chop it up. 5 seconds/speed 6

Sesame Oil: When it comes to cooking the ginger, you can leave the oil quantities the same unless you’d like to boost the sesame oil flavour too. Once again, you could easily double the sesame oil if you like that flavour. You can leave the Time/temperature/speed the same. 2 minutes/Varoma/reverse speed +1

Chilli or Capsicum: This is totally up to you. You could even leave the chilli out altogether. I like a touch of heat, and the red looks more appetising to me.

Chicken: When adding the chicken cubes, don’t make them too small they shrink, you know. You could easily add more chicken to this recipe if you need to feed more. If you go up to 500g of chicken, in step 5, change the time to 12 minutes/100°C/reverse speed +1, then check for doneness. Overcooked chicken goes a bit rubbery.

Chicken Stock: For me, the kind of chicken stock is critical. Choose something you like. There are many ways to make stock. Many Thermomix stocks use salt for their keeping qualities, so I don’t use them as much as I used to. I prefer less salt, so I have more control over the flavour of my dish. You can make your own chicken stock from scratch like this in a large pot on the stove or use something you like. But make sure it’s good. Bad stock = bad soup.

Want to feed more people, then add more green veg. The timing needs to be as above 12 minutes/100°C/reverse speed +1 because you want it to wilt slightly and have it hot to serve. You could always use your Varoma to steam off the soft green Asian Veg.

More Liquid Stock: If you need to feed more people, there are many options, but one way is to change the recipe slightly so that I don’t overcook the chicken. I’d remove the chicken and ginger from the TM bowl after step 3, follow on with step 4, cook until the stock reaches 100°C, and add the chicken back to the Thermomix bowl and continue. The stock will take longer to heat up because of its mass and possibly where you’ve stored it if it’s cold or frozen.

Noodles are tricky. I’m not too fond of a lot of the fresh Asian noodles you can get at our Aussie Supermarkets. If you have an Asian Supermarket nearby, they’re really worth a look.

Anyway, this is how I make the Mr Chens dried egg noodles. These noodles are readily available at Aussie supermarkets, and I like to start this before I start anything else. Pop the jug on, then place two or three nests of dried noodles into a Thermoserver or similar; when the jug has boiled, pour boiling water over the noodles and pop on the lid. By the time you get up to the step where you add them to the TM (as listed in the method), they’ve softened.

This recipe will serve 4 for an entre or 2 big bowls of hearty soup. Adjust the qty of noodles and Asian Greens to increase or decrease the volume.

Ginger Chicken, Shiitake, And Scallion Soup Recipe

I know we’re coming out of our major soup season, looking ahead to spring and summer foods. But as I was making a pot of Ginger Chicken Soup a few days ago – because, hey, we’ve had snow and highs in the 30’s this week – I was prompted to share the recipe with you and get it into our family’s archives.

I find myself using more fresh ginger, garlic, lemon, and sweet potatoes all the time. So this soup has naturally become one of my go-to recipes since I first made it last fall. It’s the best chicken soup recipe when I’m needing a bowl of steaming chicken soup comfort with that wonderful ginger and garlic kick!

I had originally seen this soup recipe in my bon appetit magazine. They called it Feel-Better Chicken and Rice Soup. At the time, the cold and flu season had just kicked in, and I was nursing a stuffy head and sore throat. And those slices of fresh ginger and garlic, along with the fresh lemon, were calling my name.

When I found this recipe, I immediately tore it out of the magazine and set it on the kitchen counter for the following day. I was feeling better before I even put the pot on the burner!

While the recipe was very good as written, I’ve made several changes over the past few months to better suit my family.

First, I plumped up the recipe size. Because it was a rather smallish recipe, which didn’t leave us with any leftovers. And I live for leftovers!!

Then I swapped the rice out for pasta, a request from our daughters. And added more ginger, garlic, lemon, and seasoning, all around.

I like to make this soup “whenever”. But I reeeeeeeally appreciate it when I’m not feeling well. It’s now my go-to best soup when sick.

Boost the chicken flavor. In my opinion, chicken thighs are the best chicken pieces for flavor – and they do impart alot of flavor to this broth. But I also like to keep some quality chicken bouillion on hand, for when I’m needing even more cozy chicken soup flavor.

Add immune-boosting turmeric. Like ginger, turmeric has strong antioxidant, anti-inflammatory, and antibiotic properties. These are all excellent qualities to look for when our immune system is needing a lift. If you’re a turmeric fan, this is a great soup for it!

Try a different pasta shape. I prefer a small pasta for this recipe, and most often use ditalini. A couple other great choices would be orzo or rings.

Use rice instead of pasta. Just like the original recipe calls for, you might like to use white rice instead of pasta. Bon appetit suggests using jasmine rice, adding it to cook right along with the chicken. Another option – if you have any leftover rice from a previous meal, you could always add that to the soup broth toward the end of cooking.

Lemongrass And Ginger Chicken Soup

Use white beans. If you want to eliminate the pasta and rice, white beans would work very well, too. Look for great northern beans, cannellini beans, or navy beans.

Sprinkle in some chili flakes. When I’m feeling the need for even more zing than the ginger and garlic already give this soup, I also sprinkle a few chili flakes over my bowl. Wowee! So good!

Don’t like cilantro? I get it. I know plenty of people who don’t like fresh cilantro. No worries – Italian parsley or regular curly parsley are also good. And for even more fresh green, add some chopped scallions.
