Best Crustless Asparagus Quiche Recipe
Crustless Asparagus Quiche is quick and easy with a dairy-free egg filling and sautéed asparagus. Pair it with a spring salad and turkey bacon for a delicious spring breakfast or brunch.

This crustless quiche recipe is one of my favourites to make for spring brunches. It’s easy, flavourful and takes full advantage of asparagus season.
Crustless Asparagus Ricotta Quiche
This is not your typical quiche recipe. Many quiche recipes call for whole milk, cream or half and half. This creates the classic custardy quiche filling.
To make a quiche dairy-free, I usually substitute nut milk for dairy milk. This time, to give this quiche a creamier texture, I used full fat coconut milk.
I also played around with the egg to milk ratio. Instead of the suggested 1/2 cup of milk for every 1 egg, this quiche is heavy on the eggs with 8 eggs and just 1/2 cup of coconut milk.
Asparagus Quiche {foolproof Recipe!}
Coconut milk – This is the key to making a creamy dairy-free quiche. Go for full fat coconut milk that has been stirred well. The quiche will have a hint of coconut flavour, but it’s not overpowering.
For this recipe, I sautéed the asparagus for 5-7 minutes, until it just started to get tender. If you don’t sauté it first, it may be too firm when the quiche is finished baking, and you don’t want to over-bake your quiche just to cook the asparagus.
On the flip side, be careful not to sauté the asparagus for too long, as it may end up a little too soft and mushy in the quiche.

Keto Ham And Asparagus Quiche
Below are notes for making this easy dishplus tips to customize this recipe to your liking, because once you've got the foundation down, substituting is a breeze.
But, if you want to present the spears in a sunburst pattern, cut off the tops so they are about 3-4 inches in length, depending upon the size of your pan. Cut the remainder into bite-sized pieces. I always use spears that are on the thin size...these don't need to be blanched or cooked in advance.
Ham rounds out the flavors in this quiche. Bacon is another alternative. The remaining ingredients are the usual suspects, eggs, milk, seasonings. Any combination of milk and/or cream will work and the creaminess will vary accordingly.
Mushroom Asparagus Crustless Quiche • Fit Mitten Kitchen
Mix all of the ingredients together, except for the long asparagus spears and pour the mixture into a greased pan. The one pictured is 9 inches. Use a fork to distribute the ingredients uniformly throughout the pan. Then, place the long asparagus spears in a sunburst pattern.

You can freeze it! Cooked slices can be wrapped in plastic wrap and frozen. Or, you can combine all of the raw ingredients in a plastic bag that seals and freeze it. When you are ready to cook the quiche, remove it to the refrigerator to defrost and then proceed with the cooking instructions. It works every time!

Quiche can be frozen before or after cooking. Before cooking add all of the ingredients to a plastic bag that seals. Store in freezer. Crustless Asparagus Spinach Quiche
Gotta love a quiche, right? But they can pack quite a few calories even for a small slice with all that yummy pastry base and when you are trying to be good you sometimes want a healthier option.
That's where a crustless quiche is perfect. All the great filling part of a traditional quiche but without the pastry. But isn't that just an omelette I hear you say? Well not really, as a crustless quiche isn't just eggs, it's eggs mixed with other ingredients to make a filling similar to a regular quiche and baked in the oven instead of in a pan on a stove.

When asparagus is in season, it's can be super cheap here in Canada for a large bunch, so I always grab a few bunches whenever I see it on sale. It's a delicious vegetable with a unique flavour.
Crustless Asparagus And Bacon Quiche
One of my favourite things to pair some asparagus with is bacon, it's just that yummy smokey flavour I think. They go amazingly well together, especially when you add in some cheese.
Now I know what some of you are thinking as soon as you see the word Cottage Cheese. Ewww, just no!!. But trust me when I say you really will not even know there is cottage cheese in this recipe.
For this crustless quiche, we blend the cottage cheese with the eggs, so you don't have those curds which is the thing that puts most people off. Give it a try and I am sure you will be converted.
Recipe: Don't Fuss With Pastry For This Crustless Quiche With Asparagus And Goat Cheese
You could even use some of the flavoured cottage cheese options to bring this to a whole other level if you prefer.
If you really can't get past your aversion to cottage cheese, then yes, by all means, use quark, they are actually a similar flavour, so won't make too much a difference. Cottage cheese tends to be a little bit less sour though, which I prefer in the crustless quiche recipe.
In this Crustless Asparagus and Bacon Quiche, I use two different cheese, parmesan and cheddar. I prefer to use those, because they add amazing flavours to the quiche.

Asparagus And Bacon Crustless Quiche
Here in Canada our cheddar, however, tends to be orange, rather than the white cheddar you are used to in the UK. I love Balderson cheddar here in Canada. Whatever cheddar you choose to use, go for mature as it has much more flavour.
If you want the orange colour in a cheese, go for Red Leicester instead of white cheddar, if that is the only option available to you.
You will also notice I don't use reduced-fat cheese. Why? I just find it doesn't melt as well as regular cheese due to the less fat content. Yes it's a smaller amount, but it's enough to add that flavour and cheesy goodness. Swap for reduced fat if you prefer and if that is all you like to buy, just be aware that it may not melt as well.
Crustless Asparagus Feta Quiche With Dill
I like to go for a simple salad with a slice of this crustless quiche. I usually have it for lunch or will bake it in the summer to take on picnics etc.
