Recipe Chicken Mushroom Leek Casserole

It is a chilly day out here in Johannesburg so I thought it was time for some comfort food. What better than this Creamy Chicken Mushroom Leek Casserole.

It is so rich and creamy and so full of flavor, my kids absolutely loved it. As much as they loved myCreamy Sundried Tomato Chicken

I served this dish with some fluffy mashed potatoes and we had some crusty bread to suck up all that creamy deliciousness.

Creamy Chicken, Leek And Mushroom Pasta Bake

You don’t have to serve it with potatoes if you on a low card diet. Some cauliflower mash or wild rice could work too.

It is a protein rich, low carb recipe so if you watching your diet this dish is perfect. It is also a quick dish to cook with not much prepping.

We often visited a certain cafe and this was one of my favourite things to eat. So one day I asked the chef what goes into it.

Simplest Chicken And Leek Stew Recipe

She didn’t exactly give me a recipe but she told me what ingredients went into it. The paprika and parmesan cheese is just my little thing.

Thighs are so much more succulent and delicious. Also remember chicken breasts cooks a lot quicker so you have to reduce the cooking time. Or you will have chewy chicken.

You can cook the dish completely on the stove top. I popped mine into the oven for a few minutes. This is a great dish for any day of the week.

I cooked this for the first time last weekend and it is delicious, I skipped the Parmesan and there was still lots of lovely flavour Will make a sensational chicken and leek pie Thank you

Just cooking this for the second time. The first try was received with very positive family feedback except they thought it a bit salty. Small variations today.. added bacon and used Bone broth which has much reduced salt and sugars. The commercial chicken stock I used initially had way too much salt.

Some chicken stock/broth from the store is a little salty. I prefer using a low sodium one and even then I don't add salt. Thank you for the feedback:-)
