These quick, easy, moist, and flavor filled applesauce muffins are loaded with unsweetened all natural applesauce, walnuts, rolled oats, cinnamon, and brown sugar. They are a great on the go satisfying breakfast or snack. Make a batch today and freeze half for later in the week.

Applesauce

In a medium bowl whisk together the flour, cinnamon, nutmeg, allspice, baking powder, baking soda, and salt. Then in a large bowl beat the eggs, and add the applesauce, vegetable oil, and brown sugar stirring to combine.

Now add the dry ingredients to the wet mixture in several intervals stirring a few times. Then add the rolled oats and chopped walnuts and stir just until everything is incorporated.

Spoon the batter into the paper liners filling almost all the way up. Bake for about 20 minutes or until a toothpick inserted in the center comes out clean. Let the muffins cool for about 5 minutes before removing them from the muffin tin. Please find the full recipe including recipe quantities at the bottom of the post.

First let the muffins fully cool by removing them from the tin about 5 minutes after they come out of the oven. Place the muffins on a wire cooling rack and do not wash the tin yet. Once the muffins have fully cooled place them back in the tin. Place the tin on a flat level surface in the freezer. Once they are fully frozen place them in a heavy duty freezer zipper bag removing as much air as possible. Freeze for up to 3 months.

What I especially love about these applesauce muffins is that they’re never dry. There’s nothing worse than a muffin that’s crumbly or tough in the center. In addition to adding flavor – the applesauce keeps the muffins extra moist. So it’s a total win-win.

What’s so awesome about these apple muffins is that there’s no need to get out your mixer. We’re using melted butter because butter adds more flavor than oil, and because it’s melted – you can whisk everything by hand. (Cue happy dance).

We whisk together the melted butter and sugars (a combo of white & brown sugar for more flavor) – then whisk in the eggs, vanilla extract & applesauce. I definitely recommend using unsweetened applesauce, otherwise, the muffins can end up a bit too sweet. If you have cinnamon applesauce, that works perfectly too. Your muffins will just be a bit more cinnamon-y.

Then we gently stir in the dry ingredients. We’re using ground cinnamon and a hint of nutmeg for flavor, then just the right amount of flour so that the muffins don’t end up too dry. Make sure to give your flour a whisk first, then spoon it into a dry measuring cup and level off the top.

(I’m a bit obsessed with measuring flour properly. If you just scoop it out of the bag/container, it’s too packed down and therefore you’ll add too much flour. This can lead to dry, crumbly baked goods – which we definitely don’t want).

The muffins bake at 375F so that they rise perfectly. I find a slightly higher temperature really helps muffins get that perfectly domed top, but we don’t want the oven too hot or else they can burn. For this recipe, 350F is too low but 400F is too hot. 375F = JUUUUUUUST right. (Thanks Goldilocks).

Then the magic happens when we take the muffins out of the oven. Allow them to cool for about 10 minutes – you want them still warm, but not so hot that you burn your fingers. Then dip the top in a shallow bowl of melted butter, and then they take a dip in cinnamon sugar. I love the cinnamon sugar topping because it gives a delicious crunchy finish, more flavor, and a little visual appeal.

Sweetened applesauce is usually sweetened with corn syrup. This recipe calls for unsweetened applesauce but if you only have the sweetened kind on hand I recommend that you reduce the granulated sugar to 1/3 cup and the brown sugar to 1/4 cup, packed.

Plus, have you ever tried applesauce muffins with coconut oil?! One of the best and most underrated flavor combinations, hands down. If you have coconut oil on hand please do give it a try in this recipe but if you don’t, plain ole vegetable will work too.

I know that there is an alarming amount of baking soda in this recipe however it is the perfect amount. Don’t worry, the muffins don’t turn out tasting like baking soda at all!

Remember, both the applesauce and brown sugar are acidic ingredients so therefore they are able to neutralize it, resulting in perfectly risen muffins without a metallic aftertaste.

Do not be frightened! The muffins may appear pink on the inside because of the applesauce. I’m not exactly sure how or why this happens but I believe that it’s due to skin being left on some of the apples causing the applesauce to turn pink when cooked or baked. Or it could just be a natural reaction that happens when the applesauce is out in the open for a long time.

This recipe uses both sugars because applesauce muffins with brown sugar are really delicious. Trust me, that tiny bit of molasses from the brown sugar does wonders for the flavor in this recipe.
